February is the month to nourish your soul.
In the
July/August 2004 issue of Spirituality and Health
magazine, there were 42 Ways to Nourish Your Soul. There
is not enough space in this ezine to list all of them, I
would, however, love to share my favorites with you
(along with some of their “comments” and my personal
interpretation)!

Going to the
park and swinging on a swing-can’t you just feel the
breeze on your face?
-
Practicing
joy-“I like bubbles. I keep them in the cup holder
of my car, and blow them out the window in rush hour
traffic.”-what a great way to “spread joy!”

Look up-“I stop
and look at the sky, no matter what the weather, day
or night. Often I see snippets of a rainbow, often
clouds or a glorious moon.”

Seek
wonder-“Every day I take the time to find the wonder
and uniqueness of the little things that go
unnoticed…” Wow! I am going to start that one today!

Skip! – When
was the last time you skipped? Try it, right now,
and see the difference in the way you feel!

My challenge
for you this month, is to find one new way, each
week, to nourish your soul! Will it be out in nature? In
your bathtub with flowers and candles? Or, if you live
in a warm climate, how about laying on a hammock and
just day dreaming…

Healthy
eating in February.
February, in
Michigan, can be the most challenging month of the year!
It is cold and snowy and we have had it with winter.
What will brighten February for us? Sunshine always
helps. Or maybe a fresh new tasting food! Why not try
pomegranates!
The Health Benefits of pomegranates were proclaimed in
the May 2005 issue of Reader’s Digest in the Americas100
Best article. Actually, they were reviewing a new
product called POM WONDERFUL. They said,
“POM WONDERFUL
Pomegranate Juice is the closest thing to a miracle in a
bottle we’ve found yet. The deep purple juice is loaded
with anti-oxidants, and the doctors at the Preventative
Medicine Institute, in Sausalito, California, have found
even more to love about it.” (For the whole article go

The
anti-oxidants in pomegranates are effective at
neutralizing damaging free radicals, preventing
oxidation of LDL cholesterol, and slowing or even
preventing some types of cancer.
My challenge
for you this month is to give either pomegranates or
pomegranate juice a try. Drink it for breakfast; use
the seeds on your salads; make it into a sauce to serve
over poultry; try it as a marinade; or how about Quinoa
Pomegranate Pilaf!
Quinoa-pomegranate Pilaf
Makes 4-5
servings
Ingredients:
1/2 cup water
plus ½ cup pomegranate juice
1/2 cup quinoa
1/2 cup chopped onion
1/2 cup diced carrot
Directions
1. Rinse quinoa
before cooking to remove the coating of a bitter
substance called saponins.
2. Bring water and juice to a boil.
3. Stir in quinoa, cover, reduce heat and simmer for 10
minutes.
4. Add onion and carrot
5. Simmer for 10 minutes.
6. Salt and pepper to taste
Enjoy!
NOTE: Add one
chopped apple to add a sweeter taste.
