July is the month to celebrate
4th of July! A
holiday to celebrate our freedom! Phil Humbert, a coach
whom I greatly admire, wrote about freedom in his July
TIPS newsletter. It is so well put, that I can not
improve on it with my own words. Thus…I offer you his.

Independence Day is typically celebrated with picnics
and fireworks, and that is wonderful! But I think it is
BEST celebrated as a call to ACTION in our own personal
lives. Freedom is a precious thing, but too often we
take it for granted and fail to USE it! Use your freedom
to build the life you want! You have the liberty to make
something magnificent of your life. Don't waste the
precious freedom that so many died to give us.”

Healthy eating in July
Blueberries! I
eat them by the handful; make them into blueberry
muffins, pancakes, smoothies, cookies, cereal and ice
cream topping, sauce, jam, jelly, and anything else that
pops into my head. Then, I celebrate the blueberry
stains on my kitchen counter, hands, and under my
fingernails….Only in July…
Health benefits
Blueberries
(called Bilberries in Europe) have more powerful disease
fighting antioxidants than any other fruit. SuperFoods
(Pratt and Matthews) state “As one positive report after
another has come out on blueberries, the media has taken
to calling them “brain berries” and “youth berries,” and
they certainly deserve the good press: just one serving
of blueberries provided as many anti-oxidants as five
servings of carrots, apples, broccoli, or squash.” The
benefits of blueberries include lowering your risk of
heart disease and most likely cancer. They also help to
maintain healthy skin and reduce the signs of aging AND
age related disease such as Alzheimer’s and dementia.
My challenge
for you this month is to eat a bowl of blueberries
today! (or tomorrow if you need to shop…) Then,
incorporate blueberries and blueberry products into your
regular diet. Need a new recipe? Try Quinoa Blueberry
Pudding.
Quinoa
Blueberry Pudding
Serves 6
Ingredients
1 cup dry
quinoa
2/3 cup water
2 cups apple juice
1 tablespoon lemon juice
1 teaspoon ground cinnamon
1 cup fresh or frozen blueberries
Directions
Rinse quinoa
before cooking to remove the coating of a bitter
substance called saponins.
Bring water and
apple juice to a boil.
Stir in quinoa,
cover, reduce heat and simmer for 10 minutes.
Add cinnamon,
lemon juice and blueberries.
Simmer for
about 5 minutes more.
Refrigerate
until serving time.
May top with
yogurt, cream or other topping of your choice.
Stir in ½ cup
walnuts or any other nut you prefer.
