August is the month to rest.
In June we
played…In July we celebrated…Now it is August and we
have the perfect opportunity to rest! Remember the
expression “the lazy, hazy days of summer”? I am sure
that the author meant August!
Resting means
many different things to many different people. It may
mean going away on vacation; or staying home on
vacation. Perhaps, resting means lounging by the pool,
going for long summer evening walks, wandering through
Farmers Market and sampling the freshest fruits and
vegetables of August.
For me, resting is my soul’s way of reflecting on all
the Blessings of summer. What does resting mean to you?

Healthy eating
in August
Corn-on-the-cob
in August is one of Michigan’s greatest pleasures. We
boil it, bake it, grill it, steam it, wrap it in basil
leaves, and slather it with real butter mixed with olive
oil.
When does corn
come into season where you live?
What is your
favorite way to cook corn-on-the cob?
Did you know
that corn was first grown on the Mexican plateau or the
highlands of Guatemala?
Kernels have
been found in caves dating back to 6600BC. Sweet corn,
as we know it today, was discovered in 1779 in an
Iroquois village in central new York, but did not catch
on as human food until the 1840’s.
We now eat
about 25 pounds/per person a year! (“The A-maize-ing
Grain”)
Health benefits
One medium size
ear of corn has 80 calories and only one gram of fat. It
is saturated fat free, sodium free, cholesterol free, a
good source of fiber and the anti-oxidant vitamin C. It
also contains vitamin A (except white corn), iron,
potassium, magnesium and folacin. Corn is healthiest
when purchased fresh of frozen. Canned corn often
contains high amounts of sodium.
My challenge
for you this month is to find a huge shade tree to sit
under, with the freshest ear of corn or your favorite
corn recipe, and just eat and rest. Invite family and
friends to join you, or claim this time as your own. It
is August…
Need a great
new corn recipe? Try this one from the University of
Michigan.
Bean-Quinoa-Corn Salad
Makes 6 servings.
Quinoa-Corn
mixture
1 cup quinoa,
well rinsed
2-3 scallions, minced
½ cup cooked fresh or frozen corn kernels
1 tablespoon olive oil
Juice of one lemon (about 3 tablespoons)
Salt and ground pepper to taste
Bean mixture
1 ½ cups cooked
or canned pinto or kidney beans
¼ cup chopped fresh parsley
1 cup finely diced ripe tomatoes
salt and freshly ground pepper to taste
1 tablespoon balsamic or cider vinegar
To make
quinoa-corn mixture, bring 2 cups water to a boil in a
small, heavy saucepan. (Rinse quinoa well to remove
bitter coating)
Add quinoa and
simmer gently, covered for 15 minutes. Fluff with a
fork, then let cool to room temperature.
Transfer to a
mixing bowl and combine with remaining ingredients. To
make the bean salad, in a separate bowl, combine all
ingredients and toss together.
To assemble,
transfer quinoa-corn mixture onto center of plate. Make
a well in center about 5 inches in diameter. Mound bean
salad in the well.
