November is the month of thankfulness.

What are you thankful for? Family? Friends? Meaningful work? Your health? Your home? Gratitude, the act of being thankful, is one of the most powerful and blessed ways of keeping perspective on life.

So often we focus on “if only…” if only I had a better job…if only I had more time…If only I had improved health… Instead of focusing on the “if only I had…” what if you focused on the “I am grateful I have…”

My challenge for you this month, is to start a Gratitude Journal. Each day simply jot down three things you are grateful for. If you already do have a gratitude journal, I challenge you to add one more “gratefulness” each day. See how your attitude changes as you see how much you already have to be thankful for.

Healthy eating in November

What food automatically comes to mind when you think of November? PUMPKIN, of course! Pumpkin pie, pumpkin pudding, pumpkin bread, pumpkin muffins, the list goes on. Along with the many delicious pumpkin recipes that you know, did you also know how healthy they are for you?

Health benefits

Not only are pumpkins low in calories, fat and sodium, they have no cholesterol and are high in potassium and vitamin A.

Pumpkins, (along with winter squash, sweet potatoes and dark leafy greens), are a great source of beta-carotene. Beta-carotene, a pro-vitamin, naturally converts in our bodies into Vitamin A. Vitamin A is essential for vision, healthy skin, hair and mucous membranes. It is also needed for proper bone growth, teeth development and reproduction. Vitamin A also acts as an anti-oxidant, which destroys those free-radicals in our bodies that may lead to cancer, heart disease and premature aging. BRING ON THE PUMPKIN!

My challenge for you this month is to include more pumpkin, squash and dark leafy greens in your diet. Beware of the recipes that are also high in fat (except on Thanksgiving Day.) For a great new recipe using pumpkin, try Pumpkin Quinoa Soup.

Pumpkin Quinoa Soup

Makes 8-10 cups

Ingredients

1 Tablespoon olive oil
½ cup chopped onions
½ cup chopped celery
½ cup grated carrots
(Tip: purchase the onion, celery and carrots already chopped or grated from your local supermarket salad bar.)
1 can (29 oz) solid-packed pumpkin or 3 ½ -4 cups fresh pumpkin, cooked
4 cups vegetable broth (can be purchased or home made)
1 small apple cored, peeled and chopped
1 cup cooked quinoa

Directions

1. Sauté onions, celery and carrots in olive oil until just softened.
2. Add pumpkin, vegetable broth, and apple. Simmer 10 minutes.
3. Stir in quinoa and heat through.
4. Enjoy!
5. If soup becomes too thick after setting awhile, thin with water or more vegetable broth to desired consistency.

Tip: Garnish with a dollop of yogurt, sour cream, tortilla chips or anything that sounds good to you.

Serving size: 1 cup = 100 calories, Fat = 2 grams, Carbs = 18 grams, Protein = 3 grams
